PICNIC RECIPE: Chocolate Chip Cookies

I usually use the BBC Good Food website for the cookie recipe, however rather than using chocolate chips I sometimes use smarties. It makes them look even more colourful and fun-looking. They are really easy to take on a day out, but are so tasty fresh out of the oven.


Ingredients to Make 30

150g softened butter

80g light brown muscovado sugar

80g granulated sugar

2 tsp vanilla extract

1 large egg

225g plain flour

½ tsp bicarbonate of soda

¼ tsp salt

200g chocolate chips

1) Heat oven to Gas Mark 5 (or equivalent) and line 2 baking trays with greaseproof paper.

2) Put butter, muscovado sugar and granulated sugar into bowl and beat until creamy.

3) Beat in vanilla extract and egg.

4) Sift flour, bicarbonate of soda and salt into bowl and mix in with wooden spoon.

5) Add chocolate chips and stir well.

6) Use teaspoon to make small scoops of mixture, spacing them well apart on the baking trays. Mixture should make about 30 cookies.

7) Bake for 8-10 minutes until light brown on edges and slightly soft in centre if pressed.

8) Leave on tray for a couple of minutes to set and then lift onto cooling rack.
