PICNIC RECIPE: American Chocolate Fudge Brownies

This brownie recipe is really tasty and perfect for taking on a picnic on a day out. As it uses chocolate however remember that the dogs can't have any.
Makes 12
175g butter
40g Cocoa Powder
2 eggs, lightly beaten
2.5ml vanilla essence
115g chopped pecan nuts
50g self-raising flour

1) Preheat oven to Gas Mark 4. Grease then line a 20cm square cake tin with greaseproof paper. Melt butter in pan and stir in cocoa powder. Set aside to cool.
2) Beat together eggs, sugar, vanilla essence in bowl, then stir in cooled cocoa mixture with nuts. Sift over the flour and fold into the mixture with a metal spoon.
3) Pour mixture into cake tin and bake in the oven for 30-35 minutes, until risen. Remove from oven (mixture will still be soft and wet but cooks further while cooking) and leave to cool in tin.
